Cookie Ingredients

Method

  1. 1

Preheat your oven to 350°F (175°C) to ensure it's hot enough for baking the cookies.

  2. 2

In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until well combined. Set aside.

  3. 3

In a large mixing bowl, beat the unsalted butter, granulated sugar, and brown sugar together until the mixture is light and fluffy, about 3-4 minutes.

  4. 4

Mix in the peanut butter and vanilla extract until smooth. Then, add in the large egg and continue to beat until fully incorporated.

  5. 5

Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.

  6. 6

Using a cookie scoop or tablespoon, scoop dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.

  7. 7

Make a small indentation in the center of each cookie using your thumb or the back of a spoon. Fill the indentation with about 1/2 teaspoon of jelly or jam.

  8. 8

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are set.

  9. 9

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
