Pasta Preparation

    Boil Water

    Bring a large pot of salted water to a boil.

    Cook Pasta

    Add the durum wheat pasta to the boiling water and cook according to package instructions until al dente, usually around 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta and set aside.

Cheese Sauce Preparation

    Melt Butter

    In a large saucepan, melt the butter over medium heat.

    Make Roux

    Whisk in the all-purpose flour and cook for about 2 minutes, stirring continuously to form a roux.

    Add Milk

    Gradually add the milk to the roux, whisking continuously until the mixture thickens, about 5-7 minutes.

    Add Cheese

    Stir in the Gouda and Muenster cheeses, salt, and black pepper until the cheeses are melted and the sauce is smooth.

Combining and Baking

    Preheat Oven

    Preheat the oven to 350°F (175°C).

    In a large mixing bowl, combine the cooked pasta and cheese sauce, stirring until the pasta is well coated.

    Transfer the mixture to a greased 9x13 inch baking dish.

    In a small bowl, mix the breadcrumbs with the chopped chives and olive oil.
