Prepare the Chicken
Marinate the chicken breasts in buttermilk for at least 1 hour or overnight in the refrigerator.

Coat the Chicken
In a bowl, combine flour, cornstarch, baking powder, salt, black pepper, garlic powder, and onion powder. Remove chicken from buttermilk and dredge it in the flour mixture until fully coated.

Fry the Chicken
Heat vegetable oil in a large skillet over medium heat. Once hot, carefully add the coated chicken breasts. Fry for about 5-7 minutes on each side or until golden brown and cooked through. Remove from skillet and let drain on a paper towel.

Prepare the Biscuits
Preheat the oven according to the biscuit mix instructions. In a bowl, combine biscuit mix and milk. Stir until just combined and drop spoonfuls of the mixture onto a baking sheet.

Bake the Biscuits
Bake the biscuits in the preheated oven for 10-12 minutes or until golden brown.

Assemble the Sandwich
Slice the baked biscuits in half. Place a fried chicken breast on the bottom half of each biscuit, top with a slice of cheddar cheese and a pickle slice, then place the top half of the biscuit on the sandwich.
