Method
Sandwiches
- 1
Prepare the Buttermilk Chicken
Marinate the chicken in buttermilk for at least 1 hour or overnight in the refrigerator for best results.
- 2
Prepare the Coating
In a large bowl, mix together flour, cornstarch, baking powder, salt, black pepper, and paprika.
- 3
Heat the Oil
In a heavy skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 4
Coat the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating.
- 5
Fry the Chicken
Carefully place the coated chicken into the hot oil. Fry for about 5-7 minutes on each side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
- 6
Prepare the Biscuits
While the chicken is frying, prepare the biscuits according to package instructions if using store-bought, or bake homemade biscuits.
