Grilled Chicken

Method

Grilled Chicken

1

Prepare chicken

Trim any excess fat from the 7 oz boneless, skinless chicken breast. If the breast is thick on one end, butterfly it or gently pound it to an even thickness (about 1/2 inch) so it cooks evenly.

2

Season

Pat the chicken dry with paper towels. Rub 1 tsp olive oil evenly over both sides. Sprinkle 1 tsp kosher salt, 1/4 tsp black pepper, and 1/4 tsp garlic powder (if using) onto both sides, pressing gently so the seasonings adhere. Drizzle 1 tsp fresh lemon juice over the chicken if using for a light brightness.

3

Preheat grill or pan

Preheat an outdoor grill or a heavy skillet/griddle over medium-high heat until hot (about 5 minutes). If using a grill, oil the grates lightly to prevent sticking. If using a skillet, add a thin film of oil and heat until shimmering.

4

Cook chicken

Place the chicken on the hot grill or skillet. Cook undisturbed for 4 to 5 minutes, then flip and cook 3 to 4 more minutes, or until an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Total cook time will be about 7 to 10 minutes depending on thickness.

5

Rest and serve

Transfer the chicken to a cutting board and let rest for 3 to 5 minutes to allow juices to redistribute. Slice or serve the whole breast. Serve warm.
