Make the Cheese Sauce
In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute. Gradually add the milk while whisking to prevent lumps. Cook until the mixture thickens. Stir in the mustard, salt, and pepper. Remove from heat and add the Monterey Jack cheese, stirring until melted.

Toast the Brioche
Toast the brioche slices until golden brown.

Assemble the Sandwich
On one slice of toasted brioche, layer the country ham and Swiss cheese. Top with the second slice of brioche.

In a skillet over medium heat, cook the assembled sandwich until the cheese is melted and the bread is golden brown on both sides.
