Cooking the Salmon

Pan-Seer the Salmon

Heat olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and black pepper. Place the salmon skin-side down in the skillet and cook for about 4-5 minutes. Flip and cook for another 3-4 minutes or until cooked to your desired doneness.

Prepare the Potato Salad

Boil baby potatoes in salted water until tender, about 15-20 minutes. Drain and let cool. In a bowl, mix Dijon mustard, tarragon, olive oil, red onion, salt, and pepper. Cut the potatoes in half and fold them into the dressing.

Mix the Vinaigrette

In a small bowl, whisk together maple syrup, apple cider vinegar, olive oil, salt, and pepper until smooth and well combined.

Prepare the Salad

Blanch the asparagus in boiling water for 2-3 minutes until bright green, then transfer to an ice bath. In a bowl, combine asparagus, sliced fennel, olive oil, lemon juice, salt, and pepper. Toss gently to combine.
