Preparation

    Prepare the Smoked Butter Confit Potatoes

    Peel and chop the potatoes into even-sized pieces. In a saucepan, combine the smoked butter and potatoes, and cook on low heat for about 30 minutes until tender. Season with salt.

    Cook the Seafood

    In a hot skillet, sear the sablefish fillets skin-side down for about 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes. In a separate pot, add lobster meat and prawns, and cook until they are just opaque.

    Prepare the Vegetables

    In the same skillet, add sliced fennel, diced celery, and spinach. Sauté until the vegetables are tender and spinach is wilted.

    Make the Broth

    In a separate pot, heat roasted chicken broth and add lemon juice and fresh herbs. Simmer for 10 minutes.

    Plate the Dish

    On a plate, place a generous scoop of smoked butter confit potatoes in the center. Add the sautéed vegetables on top, followed by the sablefish, lobster meat, and prawns. Finally, ladle the warm chicken and lemon broth around the dish.
