Method
For the Pomme Frites
Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips to resemble fries.
Soak the Potatoes
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
Heat the Oil
In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).
Fry the Potatoes
Carefully add the soaked potatoes to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch.
Drain and Season
Remove the fries and drain on paper towels. While still hot, sprinkle with salt to taste.
For the Lemon Pepper Aioli
Mix Ingredients
In a small bowl, combine mayonnaise, lemon juice, lemon zest, black pepper, and minced garlic. Mix well until smooth.
Chill
Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
For the Housemade Ketchup
Combine Ingredients
In a saucepan, combine tomato puree, brown sugar, apple cider vinegar, onion powder, garlic powder, and salt.
Simmer
Cook over medium heat for 15-20 minutes, stirring occasionally, until the mixture thickens to your desired consistency.
