Preparation

    Prepare the Dumplings

    In a bowl, mix together the lobster meat, scallops, and green onions. Place a small spoonful of the mixture in the center of each dumpling wrapper, wet the edges with water, and fold to seal. Set aside.

    Prepare the Vegetables

    In a pot of boiling salted water, blanch the carrots and peas for 2-3 minutes until tender. Drain and set aside.

Cooking

    Cook the Monk Fish

    Heat olive oil in a skillet over medium-high heat. Season the monk fish filet with salt and black pepper. Sear for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and keep warm.

    Cook the Dumplings

    In the same skillet, add the dumplings and cook for about 3-4 minutes on each side until golden brown. Remove and set aside.

    Make the Lobster Sauce

    In the skillet, add butter and melt over medium heat. Pour in the lobster stock and heavy cream, and simmer until slightly thickened. Stir in lemon juice and chopped chives.

Assembly

    Serve the Dish

    On a plate, arrange the seared monk fish, blanched vegetables, and lobster & scallop dumplings. Drizzle with lobster sauce and garnish with additional chives if desired.
