Braised Beef Short Rib

    Sear the Ribs

    Season the beef short ribs with salt and black pepper. In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the beef ribs on all sides until browned, about 3-4 minutes per side. Remove the ribs and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, carrots, and sliced mushrooms. Sauté for about 5-7 minutes until the vegetables are softened. Add minced garlic and cook for an additional minute.

    Add Liquids

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Let it simmer for 2-3 minutes. Add the beef broth, fresh thyme, and bay leaves.

    Braise the Ribs

    Return the beef short ribs to the pot. Bring the mixture to a simmer, then cover and reduce the heat to low. Cook for 2.5 to 3 hours, or until the meat is tender and falls off the bone.

    Prepare Potatoes

    In a large pot, cover the peeled and chopped Sieglinde potatoes with cold water. Add a pinch of salt and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Seasonal Vegetables

    Sauté Vegetables

    In a skillet, heat olive oil over medium heat. Add the seasonal vegetables and sauté for about 5-7 minutes until tender. Season with salt and black pepper to taste.
