Method

Grilling the Steak

    Prepare the Steak

    Pat the Heritage Angus Flat Iron Steak dry with paper towels. Season with salt, garlic powder, and rub with olive oil.

    Coat with Peppercorns

    Crush the black peppercorns coarsely and press them onto both sides of the steak.

    Grill the Steak

    Preheat the grill to high heat. Grill the steak for 5-7 minutes per side for medium-rare. Let it rest for 5 minutes before slicing.

Preparing the Fork Mashed Sieglinde Potatoes

    Boil the Potatoes

    Peel and cut the Sieglinde potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain and return potatoes to pot. Add butter, heavy cream, salt, and pepper. Fork mash until desired consistency.

Cooking the Seasonal Vegetables

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add zucchini, bell peppers, and carrots. Season with salt and pepper, and sauté for about 5-7 minutes, until tender.

Making the Sauce Bordelaise

    Prepare the Sauce

    In a saucepan, combine red wine and shallots. Reduce over medium heat until syrupy. Add beef stock and reduce again.

    Finish the Sauce

    Remove from heat and whisk in butter, thyme, salt, and pepper to taste.
