Steak Preparation

    Prepare the Steak

    Season the flat iron steak with salt. Crush the black peppercorns and press them into both sides of the steak. Drizzle with olive oil.

    Grill the Steak

    Preheat the grill to medium-high heat. Grill the steak for about 4-5 minutes on each side for medium-rare doneness. Remove from the grill and let rest for 5 minutes before slicing.

Mashed Potatoes Preparation

    Cook the Potatoes

    Boil the new potatoes in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add butter, heavy cream, salt, and black pepper to the potatoes. Mash until smooth and creamy. Adjust seasoning to taste.

Sauce Bordelaise Preparation

    Make the Sauce

    In a saucepan, combine red wine and shallots. Reduce over medium heat until the wine is almost evaporated. Add beef stock and reduce again until thickened.

    Finish the Sauce

    Stir in butter, thyme, salt, and black pepper. Simmer for a few minutes until well combined.
