Cake Preparation

    Prepare Hazelnuts

    Preheat the oven to 180°C (350°F). Spread hazelnuts on a baking sheet and roast for about 10-12 minutes until golden and fragrant. Let cool, then chop coarsely.

    Make the Cake Batter

    Melt dark chocolate in a heatproof bowl over simmering water. In another bowl, whisk eggs and sugar until pale and fluffy. Stir in melted chocolate, cocoa powder, vanilla extract, salt, and chopped hazelnuts until combined.

    Bake the Cake

    Pour the batter into a greased 9-inch round cake pan and bake for 25-30 minutes until set. Allow to cool in the pan for 10 minutes, then remove and cool completely on a wire rack.

Chocolate Pastry Cream Preparation

    Heat Milk

    In a saucepan, heat milk over medium heat until just simmering. Remove from heat.

    Mix Dry Ingredients

    In a bowl, whisk together sugar, cornstarch, and egg yolks until smooth.

    Combine and Thicken

    Slowly pour the hot milk into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened. Remove from heat and stir in dark chocolate and vanilla extract until smooth. Let cool.

Assembly

    Serve the Cake

    Once the cake and pastry cream are cool, place the cake on a serving plate. Spread the chocolate pastry cream on top of the cake. Garnish with fresh raspberries and serve with scoops of hazelnut gelato.
