Chocolate Pot au Crème

    Prepare the Chocolate Mixture

    In a saucepan, combine the heavy cream, milk, and sugar, and heat over medium until just simmering. Remove from heat and add the dark chocolate, whisking until melted and smooth.

    Combine Egg Yolks

    In a separate bowl, whisk together the egg yolks and vanilla extract. Slowly pour in the chocolate mixture while whisking constantly to temper the yolks.

    Strain the Mixture

    Strain the mixture through a fine-mesh sieve into a bowl to ensure a silky texture. Add a pinch of salt and mix well.

    Bake

    Pour the mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water halfway up the sides of the ramekins. Bake in a preheated oven at 325°F (160°C) for about 25-30 minutes or until just set.

    Cool

    Remove from the oven and let cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours.

Graham Crumb Topping

    Prepare the Topping

    In a bowl, combine graham cracker crumbs, melted butter, brown sugar, and a pinch of salt. Mix until well combined and crumbly.

    Top the Pot au Crème

    Once the Chocolate Pot au Crème has chilled, sprinkle the graham crumb topping over each ramekin before serving.
