Method
Chocolate Crémeux Preparation

Melt Chocolate
In a heatproof bowl, melt dark chocolate over a double boiler until smooth. Set aside to cool slightly.

Combine & Chill
Once combined, pour the mixture back into the saucepan and cook over low heat until thickened. Remove from heat and stir in the melted chocolate. Pour into molds and refrigerate until set.
Salted Caramel Preparation

Make Caramel
In a saucepan, heat the granulated sugar over medium heat until it melts and turns a golden brown color. Add the butter and stir until melted, then slowly pour in the heavy cream while stirring continuously.

Add Salt
Remove from heat and stir in the sea salt. Allow to cool slightly before using.
Torched Banana Preparation

Prepare Bananas
Slice the bananas in half lengthwise and sprinkle brown sugar on the cut side.

Torch Bananas
Using a kitchen torch, carefully caramelize the sugar on the bananas until golden and bubbly.
Raspberry Sauce Preparation

Strain Sauce
Strain the mixture through a fine mesh sieve to remove seeds. Allow to cool.
Chocolate Peanut Crumb Preparation

Combine Ingredients
In a bowl, mix crushed chocolate cookies, chopped roasted peanuts, and melted butter until crumbly.

Set Aside
Spread the mixture onto a baking sheet and let it cool and harden.
