Method

Chocolate Coconut Bar

  1. 1

    Prepare the batter

Melt the dark chocolate and butter together in a heatproof bowl over simmering water. Once melted, remove from heat and let cool slightly.

  2. 2

    Mix ingredients

In a separate bowl, whisk together the eggs, sugar, and vanilla extract. Gradually add the melted chocolate mixture, mixing until well combined. Fold in the flour and shredded coconut.

  3. 3

    Bake

Pour the batter into a greased square baking pan and bake at 175°C (350°F) for 20-25 minutes or until a toothpick comes out clean.

  4. 4

    Cool

Allow the bars to cool completely in the pan before cutting into squares.

Poached Pineapple

  1. 5

    Prepare the poaching liquid

In a pot, combine water, sugar, vanilla bean, and cinnamon stick. Bring to a boil, then reduce heat and let simmer.

  2. 6

    Poach the pineapple

Add the diced pineapple to the simmering liquid and let poach for about 15 minutes until tender. Remove from heat and cool in the liquid.

Rum Sabayon

  1. 7

    Prepare the sabayon

In a heatproof bowl, whisk together egg yolks and sugar. Gradually add the rum.

  2. 8

    Cook over simmering water

Place the bowl over a pot of simmering water and whisk constantly until the mixture thickens and becomes frothy, about 8-10 minutes.

Strawberry Garnish

  1. 9

    Prepare the strawberries

Toss the sliced strawberries with granulated sugar and let sit for 10 minutes to release their juices.
