Chill & organize

Chill glassware if desired. Place all well bottles, mixers, juices, syrups, garnishes and plenty of ice at your service bar or station so assembly is quick.

Cut limes and lemons into wedges/wheels and place garnishes in small bowls. Fill ice bins or buckets so bartenders can grab ice rapidly.

Standard Well Highball (Vodka/Gin/Rum/Tequila/Whiskey)

Make a single well highball (per serving)

Fill a highball or Collins glass 3/4 full with ice (about 1 to 1.5 cups). Pour 2 oz well spirit (choose vodka, gin, rum, tequila, or whiskey) over the ice. Top with 4–6 oz of an appropriate mixer: club soda, tonic, cola, or ginger beer depending on spirit and guest preference. For example: gin + tonic, vodka + club soda or cola, rum + cola, tequila + club soda or ginger beer, whiskey + cola. Stir gently once with a bar spoon to incorporate. Add 1/2 oz fresh lime juice for light citrus lift if desired. Garnish with a lime wedge or lemon wheel and serve with a straw.

For sweeter cocktails (rum or tequila with cola), add 1/4 oz simple syrup if needed; for brighter profiles (gin or vodka), add 1/4–1/2 oz fresh lime or lemon juice.

Fill a highball glass with ice (about 1–1.5 cups). Pour 2 oz vodka (well). Top with 5 oz club soda. Add 1/2 oz fresh lime juice. Stir gently and garnish with a lime wedge.

Fill a highball glass with ice. Pour 2 oz gin (well). Add 5 oz tonic water. Stir gently once. Garnish with a lemon wheel or lime wedge.

Fill a highball glass with ice. Pour 2 oz whiskey (well). Add 4–5 oz ginger beer. Add 1/4 oz fresh lemon juice if desired. Stir lightly and garnish with a lemon wheel or cherry.

Batching Well Drinks (for a small party)

To batch: for every 8 servings of a single spirit highball, combine 16 oz (2 cups) of the well spirit with 40 oz of the chosen mixer (approx. 5 oz per serving) and 4 oz fresh lime/lemon juice or 2 oz if only a light citrus note is desired. Chill the batch and keep on ice or in a dispenser. When serving, fill glasses with ice and pour 6–7 oz of the premixed beverage into each glass and garnish as directed.

Label the dispenser with spirit and mixer, and keep additional garnishes nearby so guests can customize.

Offer guests options: swap club soda for tonic, cola or ginger beer; add 1/2 oz triple sec or 1/2 oz simple syrup for sweetness; add fresh citrus to brighten. For a slightly stronger pour, increase spirit to 2.5 oz per serving and reduce mixer accordingly.
