Choose protein
Decide whether to cook bacon or sausage (kids are offered choice). Prepare only the chosen protein: 2 strips of bacon OR 1 breakfast sausage link. If you want both, follow both cooking steps.
Cook sausage
If sausage chosen, heat skillet over medium heat with 1 teaspoon butter or a light spray. Add the sausage link and cook 10–12 minutes, turning frequently, until browned on all sides and internal temperature reaches 160°F (71°C). For a kid-friendly touch, brush 1 teaspoon maple syrup on the link during the last minute.
Cook eggs (fried or scrambled)
For fried eggs: heat 1 teaspoon butter in a clean nonstick skillet over medium-low. Crack 2 eggs into the pan, season with 1/4 tsp salt and a pinch of pepper. Cook 2–3 minutes for set whites and runny yolks, or cover and cook 3–4 minutes for firmer yolks. For over-easy, flip gently after 2 minutes and cook 30–45 seconds more. For scrambled: whisk 2 eggs with 1 tablespoon milk (optional) and 1/4 tsp salt and pepper. Melt 1 tsp butter in skillet over medium-low, pour eggs in, let set briefly, then stir gently until soft curds form, about 1–2 minutes. Remove from heat while slightly underdone for creamy texture.
Keep warm
If cooking components at different times, keep finished items on a warm plate in a low oven (170°F / 77°C) or covered loosely with foil so everything is served warm together.
Choice of bread
Select bread: two slices of white bread (default) or substitute with whole wheat, an English muffin, or a bagel. Toast to preference in a toaster: 1–2 minutes for light toast, 2–3 minutes for medium.
Assemble: Place eggs and chosen protein on or beside the bread. For a simple sandwich, place the egg (fried or scrambled) on one slice, bacon or sausage on top, then cover with the second slice. Cut in half for easier eating.
Optional garnish / sides
Serve with 1 tablespoon ketchup for dipping bacon or eggs, or 1 teaspoon maple syrup for the sausage. Add 1/2 cup fresh fruit and a 1-cup serving of milk or juice to complete the kid-friendly meal.
