Method
Sweet Potato Fries
Preheat and prepare
Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat. Place a wire rack on the sheet if you have one to promote airflow (optional).
Cut and dry
Peel sweet potatoes if desired. Cut each sweet potato into evenly sized fries about 1/3 to 1/2 inch thick. Place cut fries in a large bowl of cold water and soak 15 minutes to remove excess starch. Drain and pat completely dry with clean kitchen towels or paper towels.
Coat fries
In a large bowl, toss the dried fries with cornstarch until evenly coated. Add 3 tablespoons vegetable oil, smoked paprika, ground cumin, garlic powder, kosher salt, and black pepper. Toss thoroughly so each fry is lightly coated.
Arrange and bake
Spread fries in a single layer on the prepared baking sheet (use two sheets if needed to avoid crowding). If using a rack, place fries on the rack. Bake in the preheated oven for 20 minutes, then flip fries or shake the pan and rotate the sheet. Continue baking 10–15 minutes more, until edges are crisp and centers are tender. Total bake time ~30–35 minutes depending on thickness.
Finish
Remove fries from oven and immediately season with an additional pinch of salt, and sprinkle chopped parsley if using. Let sit 2–3 minutes then serve hot with sauces.
Curry Aioli
In a small bowl whisk together mayonnaise and plain yogurt until smooth. Add curry powder, lemon juice, minced garlic, honey, salt and black pepper. Whisk to combine. Taste and adjust seasoning: add more curry powder for heat or a little more honey/lemon to balance. If mixture is too thick, whisk in up to 1 teaspoon water at a time until desired dipping consistency is reached. Chill at least 10 minutes to let flavors meld before serving.
House Ketchup
Combine ketchup, brown sugar, apple cider vinegar, smoked paprika, Worcestershire sauce and hot sauce in a small bowl. Whisk until sugar dissolves and mixture is smooth. Taste and adjust: add more vinegar for tang, sugar for sweetness, or hot sauce for heat. Chill briefly or serve immediately alongside fries.
