Method
Prepare Filling
Sauté vegetables
Heat 1 tablespoon butter or 1 tablespoon oil in a medium skillet over medium heat. Add the thinly sliced onion and bell pepper and sauté until softened and slightly caramelized, about 5–7 minutes. Remove from heat and let cool briefly.
Mix chicken and seasonings
In a bowl, combine the cooked shredded chicken with ground cumin, chili powder, salt, and black pepper. Add the minced jalapeño (or pickled jalapeño), lime juice, and chopped cilantro. Stir in the sautéed onions and peppers until evenly distributed.
Add cheese
Fold in 1 cup shredded cheddar and 1 cup shredded Monterey Jack so the mixture is cohesive and slightly moist. Taste and adjust seasoning (add a pinch more salt or lime if desired).
Assemble & Cook Quesadillas
Heat a large nonstick or cast-iron skillet over medium-low to medium heat. Wipe the skillet clean if needed and add 1/2 tablespoon butter or 1/2 teaspoon oil, spreading to coat the surface.
Place one flour tortilla in the skillet. Sprinkle about 1/4 cup (or a thin even layer) of the cheese mixture over half of the tortilla, leaving a small border. Spread about 1/2 cup of the chicken-vegetable mixture on top of the cheese layer, then top with another thin sprinkle of cheese (this helps the top and bottom stick together).
Fold the empty half of the tortilla over the filled half to make a semicircle. Press gently with a spatula to compress slightly and ensure even contact with the skillet.
Cook for 2–3 minutes until the bottom is golden brown and crisp. Carefully flip the quesadilla using a spatula and cook the second side for another 2–3 minutes until golden and the cheese is fully melted. If the tortilla is browning too quickly before the cheese melts, lower the heat slightly and cover the skillet for 30–60 seconds.
Transfer the cooked quesadilla to a cutting board and let rest for 1 minute, then slice into 3–4 wedges with a sharp knife or pizza cutter. Repeat the process with the remaining tortillas and filling, adding more butter or oil (about 1/2 tablespoon) to the skillet between each quesadilla as needed.
Serve
Arrange quesadilla wedges on a platter and serve immediately with sour cream, salsa, guacamole, and lime wedges on the side. Optional: garnish with extra chopped cilantro or a drizzle of hot sauce.
