Chicken Marinade

Sandwich Assembly

Method

Chicken Marinade

  1. 1

    Prepare the Marinade

In a large mixing bowl, combine the buttermilk, hot sauce, salt, black pepper, paprika, garlic powder, and onion powder. Whisk together until well mixed.

  2. 2

    Marinate the Chicken

Add the chicken thighs to the buttermilk mixture, ensuring they are fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.

Breading

  1. 3

    Prepare the Breading Mixture

In a separate bowl, combine the all-purpose flour, cornstarch, cayenne pepper, salt, and black pepper. Mix well until evenly combined.

  2. 4

    Bread the Chicken

Take the marinated chicken out of the refrigerator. Remove each piece from the buttermilk, allowing excess to drip off, then coat thoroughly in the breading mixture. Ensure an even coating on all sides.

Frying

  1. 5

    Heat the Oil

In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 6

    Fry the Chicken

Carefully place the breaded chicken thighs in the hot oil, frying in batches if necessary to avoid overcrowding. Fry for 6-8 minutes per side or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

  3. 7

    Drain the Chicken

Once cooked, remove the chicken from the oil and let it drain on a paper towel-lined plate to absorb excess oil.

Sandwich Assembly

  1. 8

    Assemble the Sandwich

Spread mayonnaise on the bottom half of each brioche bun. Place a piece of fried chicken on top, followed by pickles. Drizzle with additional hot sauce if desired, then place the top half of the bun on.

  2. 9

    Serve

Serve the Nashville chicken sandwiches warm with your favorite sides.
