    Wash and peel the Russet potatoes. Cut them into uniform sticks, about 1/4 inch thick, to ensure even cooking.

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This will help remove excess starch and make the fries crispier.

    In a large, heavy-bottomed pot or deep fryer, heat the duck fat over medium heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
