Prepare the Ingredients
Clean the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

Roast the Tomatoes
Preheat the oven to 400°F (200°C). Cut the tomatoes in half, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 20-25 minutes until caramelized.

Steam the Mussels
Add the cleaned mussels to the pot along with the roasted tomatoes, white wine, and fresh thyme. Cover the pot and steam the mussels for 5-7 minutes, or until they open up.

Prepare the Ciabatta
While the mussels are steaming, slice the ciabatta bread and toast it lightly until golden brown.

Serve
Once the mussels are cooked, discard any that remain closed. Serve the mussels in a bowl with the broth, roasted tomatoes, and toasted ciabatta on the side.
