Prepare the Gorgonzola Spread
In a mixing bowl, combine the gorgonzola cheese and cream cheese. Whip together until smooth and creamy. Set aside.

Roast the Beets
If you haven't already roasted your beets, wrap them in aluminum foil and roast in a preheated oven at 400°F (200°C) for about 45-60 minutes until tender. Let cool, peel, and chop into small cubes.

Burnt Honey
In a small saucepan, heat honey over medium heat until it starts to bubble. Allow it to cook for about 5-8 minutes until it turns a deep amber color. Remove from heat and let cool slightly.

Assemble the Bruschetta
Spread a generous layer of the whipped gorgonzola on each toasted bread slice. Top with roasted beet cubes and drizzle with burnt honey. Garnish with fresh thyme if desired.
