Cooking Instructions

  1. 1

    Prepare the Swordfish

Preheat the grill to medium-high heat. Brush the swordfish steaks with olive oil and season with salt, black pepper, and lemon juice. Let them marinate for about 15 minutes.

  2. 2

    Grill the Swordfish

Place the swordfish steaks on the grill and cook for about 4-5 minutes on each side, or until the fish is cooked through and has nice grill marks. Remove from the grill and set aside.

  3. 3

    Prepare the Romaine

Cut the romaine heads in half lengthwise. Brush the cut sides with olive oil and sprinkle with salt. Grill the romaine for about 2-3 minutes until slightly charred and wilted.

  4. 4

    Melt the Tomatoes

In a skillet over medium heat, add a bit of olive oil and the sliced tomatoes. Cook for about 5 minutes until the tomatoes start to soften and melt. Season with salt and pepper.

  5. 5

    Assemble the Plate

On each plate, place a half of grilled romaine, top with melted tomatoes, a scoop of corona beans, and a generous dollop of olive tapenade. Finally, place the grilled swordfish on top.
