Roast the Brussels Sprouts
Preheat your oven to 425°F (220°C). Trim the ends of the Brussels sprouts and cut them in half. Toss them with olive oil, salt, and black pepper. Spread them out on a baking sheet and roast for 20-25 minutes until they are crispy and golden brown.

Cook the Pancetta
While the Brussels sprouts are roasting, heat a skillet over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Prepare the Smoked Honey Vinaigrette
In a small bowl, whisk together the smoked honey and lemon juice until well combined. Set aside.

Make the Lemon Crema
In another bowl, mix the sour cream with a pinch of salt and a squeeze of lemon juice to taste. Adjust seasoning as needed.
