Prepare the Chicken
Preheat your oven to 375°F (190°C). Place each chicken breast between two sheets of plastic wrap and pound to about 1/2 inch thickness using a meat mallet.

Assemble the Saltimbocca
On each chicken breast, layer 2 slices of prosciutto and 3 sage leaves. Fold the chicken in half to cover the filling and secure with toothpicks if necessary.

Cook the Chicken
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 3-4 minutes on each side until golden brown.

Add Cheese and Bake
Top each piece of chicken with fontina cheese and transfer the skillet to the preheated oven. Bake for about 10-15 minutes, or until the chicken is cooked through and the cheese is melted.

Serve
Remove the toothpicks from the chicken and serve hot, drizzled with arugula pesto.
