Method

Waffle Preparation

  1. 1

    Make the Waffle Batter

In a large bowl, whisk together flour, baking powder, and salt. In another bowl, combine milk, eggs, and melted butter. Mix wet ingredients into dry ingredients until just combined.

  2. 2

    Cook the Waffles

Preheat your waffle maker. Pour the batter into the waffle maker and cook according to the manufacturer's instructions until golden brown.

Turkey and Hollandaise Preparation

  1. 3

    Prepare the Hollandaise Sauce

In a heatproof bowl, whisk together egg yolks and lemon juice. Place over a pot of simmering water and whisk until thickened. Gradually whisk in melted butter until smooth. Stir in cranberry sauce and season with salt and pepper.

  2. 4

    Heat the Turkey

In a skillet, gently warm the shaved turkey over low heat until heated through. Do not overcook.

Crispy Leeks Preparation

  1. 5

    Prepare the Leeks

Slice leeks thinly and rinse thoroughly to remove any grit. Pat dry.

  2. 6

    Fry the Leeks

Toss leeks in flour and salt. Heat oil in a pan and fry leeks until golden and crispy. Drain on paper towels.

Assembly

  1. 7

    Assemble the Dish

Place a waffle on a plate, top with warm turkey, drizzle with cranberry hollandaise, and finish with crispy leeks.
