    Cook Breakfast Potatoes

    In a skillet, heat a little oil over medium heat. Add diced breakfast potatoes and cook until golden brown and tender, about 15-20 minutes. Season with salt and pepper to taste.

    Crisp Pancetta

    In another skillet, cook chopped pancetta over medium heat until crispy. Remove from heat and set aside.

    Make Smoked Bacon Hollandaise

    In a double boiler or a heatproof bowl over simmering water, whisk together egg yolks, lemon juice, and salt until thick. Slowly drizzle in melted butter while whisking vigorously until the sauce is thick and creamy. Stir in smoked paprika.

    Poach Eggs

    Bring a pot of water to a gentle simmer. Crack eggs into separate small bowls. Create a gentle whirlpool in the water and slide eggs in one at a time. Poach for about 3-4 minutes or until whites are set and yolks are still runny.

    Combine and Serve

    In a large mixing bowl, combine cooked breakfast potatoes, corn, green peas, red onion, and shredded smoked chicken. Mix well and heat through. Serve the mixture onto plates, top with crispy pancetta, a poached egg, and drizzle with smoked bacon hollandaise. Serve with toast on the side.
