Preparation

    Prepare the Roasted Beets

    Preheat the oven to 400°F (200°C). Toss the cubed beets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.

    Make the Chickpea Quinoa Cakes

    In a mixing bowl, mash the chickpeas, then add cooked quinoa, breadcrumbs, parsley, garlic, egg, salt, and pepper. Mix until combined. Form into small patties.

    Fry the Cakes

    Heat olive oil in a skillet over medium heat. Cook the patties for about 3-4 minutes on each side until golden and crispy.

    Braised Greens

    In a large pot, heat olive oil and sauté minced garlic until fragrant. Add mixed greens and vegetable broth. Cover and let cook for about 5-7 minutes until wilted.

    Prepare the Saffron Orange Glaze

    In a small saucepan, combine orange juice, saffron threads, honey, and a pinch of salt. Simmer over low heat until slightly thickened (about 10 minutes).

Cooking the Salmon

    Sear the Salmon

    Season the salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat. Place the salmon skin-side down and sear for 4-5 minutes until crispy. Flip and cook for another 2-3 minutes until cooked to your preference.
