Mashing the Grains
In a large pot, heat 5 liters of water to about 75°C (167°F). Add the pale malt and caramel malt. Maintain the temperature for 60 minutes, stirring occasionally.

Lautering
After mashing, drain the liquid (wort) into another pot. Rinse the grains with hot water to extract more sugars.

Boiling the Wort
Bring the wort to a boil, then add the Cascade hops. Boil for 60 minutes, adding the Centennial hops in the last 15 minutes.

Cooling the Wort
After boiling, cool the wort quickly using a wort chiller or an ice bath to about 20°C (68°F).

Fermentation
Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal with an airlock and let ferment for 1-2 weeks at around 20°C (68°F).

Bottling
Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water. Add it to the beer and bottle into sanitized bottles. Cap the bottles and allow to carbonate for another 1-2 weeks.
