In a large pot, heat 10 liters of water to approximately 70°C (158°F). Add the dark malted barley and caramel malt, stirring well. Maintain the temperature and let it steep for 60 minutes.

After mashing, carefully sparge the grains with hot water to collect the wort. Aim for a total volume of about 12 liters of wort.

Bring the wort to a boil. Once boiling, add the hops and continue to boil for 60 minutes.

After boiling, cool the wort rapidly to about 20°C (68°F) using a wort chiller or an ice bath.
