Method

Herb Roasted Chicken

    Prepare the Chicken

    Preheat the oven to 425°F (220°C). Pat the chicken dry with paper towels and place it in a roasting pan.

    Season

    In a small bowl, mix olive oil, rosemary, thyme, garlic, salt, and pepper. Rub this mixture all over the chicken, including under the skin. Squeeze lemon juice over the chicken and place the halved lemon inside the cavity.

    Roast

    Roast the chicken in the preheated oven for about 1 hour and 20 minutes, or until the juices run clear when pierced at the thickest part of the thigh.

    Rest

    Remove from the oven and let the chicken rest for 10-15 minutes before carving.

Butter Poached Wild Prawns

    Melt Butter

    In a saucepan, melt the butter over low heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Cook Prawns

    Add the prawns to the melted butter and cook for 3-5 minutes, or until they turn pink and opaque. Stir in parsley, lemon juice, salt, and pepper to taste.

    Prepare Vegetables

    Toss fingerling potatoes, carrots, and zucchini with olive oil, salt, and pepper in a bowl.

    Roast

    Spread the vegetables in a single layer on a baking sheet and roast in the oven (alongside the chicken) for about 30-35 minutes, or until tender and golden brown.
