Prepare the Marinade
In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the pork loin and let it marinate for at least 30 minutes.

Cook the Lentils
In a large pot, combine the lentils, vegetable broth, diced carrot, celery, chopped onion, minced garlic, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for about 30-35 minutes until the lentils are tender.

Roast the Vegetables
Preheat the oven to 400°F (200°C). Toss the chopped carrots, parsnips, and beets with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for about 25-30 minutes, until tender and slightly caramelized.
Tomato Balsamic Jam

Make the Jam
In a saucepan over medium heat, combine the halved cherry tomatoes, balsamic vinegar, sugar, and a pinch of salt. Cook for about 15-20 minutes until the mixture thickens and becomes jam-like, stirring occasionally.
