Method
Prepare Beef Short Ribs

Season and Sear
Preheat the oven to 300°F (150°C). Season the short ribs with salt and black pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

Braise
Cover and transfer the pot to the oven. Braise for 3 hours or until the meat is tender and falls off the bone.
Prepare Black Garlic Polenta

Cook Polenta
In a saucepan, bring water to a boil. Gradually whisk in the polenta. Reduce heat to low and stir continuously until thickened, about 15 minutes.

Add Flavor
Stir in black garlic, butter, parmesan cheese, salt, and black pepper. Mix until creamy and smooth.
Prepare Roasted Vegetables

Roast Vegetables
Spread the vegetables on a baking sheet and roast for 25-30 minutes, stirring halfway through, until tender and slightly caramelized.
Prepare Caribbean Inspired Demi

Make Demi
Add soy sauce, brown sugar, pineapple juice, and scotch bonnet pepper. Simmer for 15-20 minutes until slightly thickened. Strain if desired.
