Preparation

    Prepare the Steak

    Rub the Angus striploin with blackening spice, salt, and black pepper. Let it sit at room temperature for 30 minutes.

    Roast the Fingerlings

    Preheat the oven to 400°F (200°C). Toss the fingerling potatoes with olive oil, salt, and black pepper. Cut bacon into small pieces and mix with potatoes. Spread on a baking sheet and roast for 25-30 minutes until crispy.

    Sauté the Vegetables

    In a skillet, heat a little olive oil over medium heat. Add pearl onions and crimini mushrooms, sauté until golden brown. Set aside.

    Prepare the Rutabaga

    Peel and cut the rutabaga into baton shapes. Blanch in boiling water for 5 minutes, then sauté in a skillet until golden.

    Make the Lime Butter

    In a small bowl, mix the unsalted butter with lime juice and lime zest until well combined.

Cooking

    Cook the Steak

    In a cast-iron skillet, heat a tablespoon of olive oil over high heat. Add the steak and sear for 4-5 minutes on each side for medium-rare. Remove from heat and let rest for 5 minutes.

    Fry the Leeks

    In a separate pan, heat oil and fry the leeks until crispy. Drain on paper towels.

    Plate the Dish

    On a plate, place the roasted fingerlings, sautéed vegetables, and rutabaga batons. Slice the steak and place it on top. Drizzle with lime butter and garnish with crispy leeks.
