Make the Apple Butter
In a large pot, combine the chopped apples, brown sugar, cinnamon, cloves, and lemon juice. Cook over medium heat, stirring occasionally, until the apples are soft and the mixture has thickened (about 30-40 minutes). Blend until smooth, then let cool.

Make the Shortcrust Cookie
Preheat the oven to 350°F (175°C). In a bowl, cream together the butter and powdered sugar. Add the flour, egg yolk, vanilla, and salt, mixing until combined. Roll into a circle and place on a baking sheet. Bake for 12-15 minutes, or until lightly golden. Let cool.

Assemble the Dish
Layer the cooled apple butter at the bottom of a baking dish, followed by the custard. Refrigerate for at least 2 hours. Before serving, sprinkle granulated sugar on the custard and use a kitchen torch to brûlée the top until caramelized.
