    Heat 2 tbsp of olive oil in a skillet over medium heat. Add the potato mixture and press down with a spatula. Cook until golden brown and crispy, about 5-7 minutes per side. Once done, remove from the skillet and keep warm.

    Season the flat iron steak with salt and black pepper on both sides. In the same skillet, add another tablespoon of olive oil and increase the heat to high. Sear the steak for about 4-5 minutes on each side for medium-rare. Adjust the cooking time based on your desired doneness. Remove from heat and let it rest for at least 5 minutes before slicing.
