1. Prepare the Quinoa

Rinse the quinoa under cold water. In a saucepan, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until water is absorbed. Fluff with a fork and set aside.

2. Cook the Chicken

In a skillet, heat 1 tablespoon of olive oil over medium heat. Season chicken breasts with salt, pepper, and cumin. Cook for 6-7 minutes on each side until fully cooked. Remove from skillet and slice into strips.

3. Sauté Vegetables

In the same skillet, add the remaining olive oil. Sauté the red bell pepper, black beans, and corn for 5-7 minutes until tender.

4. Combine Ingredients

In a large bowl, combine the cooked quinoa, sautéed vegetables, sliced chicken, lime juice, and chopped cilantro. Toss until well mixed.

5. Serve

Serve warm, garnished with additional cilantro if desired.
