Method

Prime Rib Preparation

    Season the Roast

    Preheat the oven to 450°F (232°C). In a small bowl, mix together salt, black pepper, garlic powder, onion powder, thyme, and rosemary. Rub the spice mixture all over the prime rib roast. Drizzle with olive oil.

    Roast the Prime Rib

    Place the seasoned prime rib in a roasting pan and roast in the preheated oven for 20 minutes. Reduce the oven temperature to 325°F (163°C) and continue roasting for about 1 hour and 15 minutes for medium-rare, or until a meat thermometer reads 130°F (54°C).

Duck Fat Potatoes

    Prepare the Potatoes

    While the prime rib is roasting, wash the baby potatoes and cut them in half. In a large bowl, toss the potatoes with duck fat, salt, and fresh rosemary.

    Roast the Potatoes

    Spread the potatoes on a baking sheet and roast in the oven for 30-40 minutes, or until golden brown and tender, turning halfway through.

Au Jus Preparation

    Make the Au Jus

    In a saucepan, combine beef broth, red wine, shallots, and Worcestershire sauce. Bring to a simmer over medium heat and let it reduce for about 15 minutes, then strain.

Horseradish Sauce

    Prepare the Horseradish Sauce

    In a small bowl, mix together horseradish, sour cream, Dijon mustard, and salt to taste. Adjust the seasoning as desired.

Serving

    Slice the prime rib and serve it with roasted duck fat potatoes, au jus, and creamy horseradish on the side.
