Prepare the Prime Rib
Preheat your oven to 350°F (175°C). Season the prime rib with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the prime rib on all sides until browned. Transfer to the oven and roast until the internal temperature reaches your desired doneness (about 20-25 minutes for medium-rare). Remove from oven and let rest for at least 10 minutes before slicing.

Prepare the Green Chile
While the prime rib is resting, roast the Hatch green chiles over an open flame or in the oven until the skin blisters. Once roasted, place them in a bowl and cover with plastic wrap to steam for about 10 minutes. Peel off the skin, remove the seeds, and slice them.

Assemble the Sandwich
Slice the ciabatta rolls in half. Layer sliced prime rib, roasted Hatch green chiles, and a slice of pepper jack cheese on the bottom half of each roll. Place the top half of the roll on the sandwich.
