Fried Chicken

    Marinate the Chicken

    In a bowl, combine the chicken pieces and buttermilk. Let it marinate in the refrigerator for at least 2 hours, preferably overnight.

    In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.

    Fry the Chicken

    Heat duck fat in a large skillet over medium-high heat. Remove chicken from buttermilk, allowing excess to drip off, then dredge in the flour mixture. Fry until golden brown and cooked through, about 15-20 minutes, flipping once.

    In another skillet, heat duck fat over medium heat. Add cubed potatoes, season with salt and black pepper, and cook until crispy and golden, about 20-25 minutes, stirring occasionally.

    Cook the eggs to your preferred style (fried, scrambled, poached) in a separate pan.

    In a saucepan, melt butter over medium heat. Whisk in flour until smooth, cooking for 1-2 minutes. Gradually add chicken broth, Dos XX, and tequila, whisking until thickened. Season with salt and black pepper.
