Preparation and Cooking

    Marinate the Chicken

    In a large bowl, soak the organic chicken breasts in buttermilk for at least 2 hours, or overnight in the refrigerator for best results.

    Prepare the Dredging Mixture

    In another bowl, combine the flour, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

    Heat the Duck Fat

    In a deep skillet or frying pan, heat the duck fat over medium-high heat until it reaches 350°F (175°C).

    Dredge the Chicken

    Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each breast in the flour mixture, ensuring they are fully coated.

    Fry the Chicken

    Carefully place the coated chicken breasts into the hot duck fat. Fry for about 6-8 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).

    Drain and Rest

    Remove the chicken from the fat and place on a wire rack or paper towels to drain any excess fat. Allow to rest for a few minutes.

    Serve the fried chicken topped with fresh arugula and your choice of tequila and Dos XX gravy, alongside duck fat potatoes.
