    Prepare the Clams

    In a large pot, bring water to a boil and add the fresh clams. Cook for about 5-7 minutes until the clams open. Remove from heat, drain, and set aside. Reserve the clam broth.

    Sauté the Vegetables

    In the same pot, melt the butter over medium heat. Add the chopped onion and celery, and sauté until softened, about 5 minutes.

    Add Potatoes and Broth

    Add the diced potatoes, reserved clam broth, and clam juice to the pot. Add the thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.

    Incorporate Clams and Cream

    Remove the bay leaves, then add the cooked clams and heavy cream to the pot. Stir and cook for an additional 5 minutes, making sure not to boil.

    Serve

    Ladle the chowder into bowls and top with herb roasted croutons.
