Grilled Mediterranean Octopus

Preparation

    Preparing the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and boil for about 45 minutes or until tender. Remove from water and let cool.

    Grilling the Octopus

    Once cooled, cut the octopus into tentacle pieces. Preheat the grill to medium-high heat. Brush the octopus pieces with olive oil, and season with salt and black pepper. Grill for about 3-4 minutes on each side until charred.

    Roasting the Tomatoes

    While the octopus is grilling, preheat the oven to 400°F (200°C). Cut the Roma tomatoes in half, drizzle with olive oil, and season with salt and pepper. Roast for about 20 minutes until soft.

    Making the Vinaigrette

    In a small bowl, mix the fresh oregano, lemon juice, and 2 tablespoons of olive oil. Whisk well to combine.

    Plating the Dish

    On a serving plate, spread the house-made hummus as a base. Arrange the grilled octopus on top, add roasted Roma tomatoes and sprinkle with capers. Drizzle the oregano lemon vinaigrette over the top.
