Directions

  1. 1

    Prepare the Tenderloin

Season the beef tenderloin with salt and black pepper. In a hot skillet, sear the tenderloin on all sides until browned, about 8-10 minutes for medium-rare. Remove from heat and let it rest for 5 minutes before chopping.

  2. 2

    Make the Guacachile

In a bowl, mash the avocados and mix in lime juice, chopped cilantro, minced garlic, and salt to taste. Adjust seasoning as needed.

  3. 3

    Prepare the Cabbage Slaw

Thinly slice the green and red cabbage and mix them in a bowl. Add olive oil, salt, and pepper, and toss until well combined.

  4. 4

    Grill the Jalapeño

Heat a grill pan over medium-high heat. Place the whole jalapeño on the grill and cook until charred on all sides, about 5-7 minutes. Remove from heat and slice.

  5. 5

    Slice the Radishes

Thinly slice the radishes using a mandoline or sharp knife.

  6. 6

    Assemble the Dish

On a large platter, arrange the chopped tenderloin, cabbage slaw, guacachile, sliced radishes, crumbled queso fresco, and grilled jalapeño.
