Rice & soaking
Rinse the basmati rice under cold water until the water runs clear to remove excess starch. Soak the rice in 2 cups of water with 1 tsp salt for 20–30 minutes. Drain thoroughly before cooking.
Marinade & chicken
Marinate chicken
In a large bowl combine the chicken, yogurt, ginger-garlic paste, turmeric, red chili powder, coriander powder, garam masala, 1.25 tsp salt and lemon juice. Mix well so the chicken is evenly coated. Cover and refrigerate for at least 30 minutes, preferably 1–2 hours. If using bone-in chicken, marinate 2–3 hours for best flavor.
If using frozen chicken, fully thaw before marinating and pat dry.

Temper whole spices
Heat 3 tablespoons ghee or oil in a heavy-bottomed wide pot (heavy pan or Dutch oven) over medium heat. Add cumin seeds and let them crackle for a few seconds. Add bay leaves, cinnamon, cardamom, cloves, peppercorns and star anise. Sauté for 20–30 seconds until fragrant, taking care not to burn the spices.
Add the thinly sliced onions and 1 tablespoon oil or ghee if needed. Cook on medium heat, stirring often, until onions become golden brown and start to caramelize (8–12 minutes). Reserve about 2 tablespoons of fried onion for garnish if making birista; other onions should stay in the pot to form the base.
Cooking chicken & methi
Increase heat to medium-high. Add the marinated chicken to the pot with the spices and onions. Sear the chicken pieces for 3–4 minutes without moving to get some color, then turn and cook another 2–3 minutes. Stir in the chopped tomato (if using) and slit green chilies. Cook 4–5 minutes until tomatoes soften.
Add the chopped fresh methi leaves (reserve 2 tablespoons for garnish if desired). Methi will wilt and reduce considerably; stir to combine. Cook 3–4 minutes so rawness of methi disappears and chicken is partially cooked.
Pour in 2.25 cups water or low-sodium chicken stock, scrape any browned bits from the pan, and bring to a gentle boil. Taste the liquid and adjust salt if necessary. Reduce heat to low, cover the pot with a tight-fitting lid, and simmer for 12–15 minutes (for boneless) or 20–25 minutes (for bone-in) until chicken is cooked through and tender.
Rice finishing & layering
While the chicken is cooking, bring a separate pot of water to a rolling boil (if you prefer par-cooking rice separately) and cook the drained basmati rice in salted boiling water for 5–6 minutes until it is about 70% cooked (grains still have a slight bite). Drain the rice well. Alternatively, you may add soaked, drained rice directly to the pot with the chicken (see next step) if you prefer one-pot method; reduce added liquid accordingly.
One-pot assembly (optional)
If using a true one-pot method: after the chicken has simmered and there is about 1 cup of cooking liquid remaining, gently spread the drained rice over the chicken in an even layer. Sprinkle chopped cilantro, mint, reserved methi, kasuri methi (if using), slit green chilies and 1 tablespoon ghee over the rice. Mix saffron threads into warm milk and drizzle over rice along with fried onions. Cover tightly and cook on very low heat (dum) for 12–15 minutes until rice is fully cooked and steam has infused flavors.
Layered pulao/biryani method
If you par-cooked rice separately: after chicken is cooked and liquid is at a gentle simmer, spread half the rice evenly over the chicken. Sprinkle half the chopped cilantro, mint, reserved methi and half the fried onions. Add the remaining rice, top with remaining herbs, 1 tablespoon ghee, saffron-milk and remaining fried onions. Cover tightly with lid or seal with foil and cook on very low heat (dum) for 12–15 minutes until rice finishes cooking and absorbs flavors.
Finishing & serve
Transfer to a serving platter. Garnish with additional fried onions, a few sprigs of cilantro and mint, and a squeeze of lemon if desired. Serve hot with raita, salad or pickles.
