Cut and dry idlis

If idlis are thick, halve them horizontally. Cut each idli into 4–6 bite-size cubes or wedges. Spread pieces on a tray and pat lightly with a paper towel to remove excess surface moisture. This helps them crisp up when frying.

Heat a large nonstick skillet or cast-iron pan over medium heat. Add 3 tablespoons vegetable oil and 1 tablespoon butter (if using). Allow the oil to heat until shimmering but not smoking.

Add the idli pieces in a single layer (work in batches if necessary). Fry without moving for 2–3 minutes so bottoms develop a golden crust. Flip pieces and fry the other side 2–3 minutes until golden and crispy all over. Total frying time per batch ~5–7 minutes. Remove to a plate lined with paper towels. While frying, sprinkle 1/4 teaspoon black pepper and 1/2 teaspoon salt evenly over the pieces.

Seasoning & Toss

In a separate small pan or the same skillet wiped clean, heat 1 tablespoon oil over medium heat. Add 1/2 teaspoon mustard seeds and let them pop (about 20–30 seconds).

Add 1/2 teaspoon urad dal and 1/2 teaspoon chana dal. Fry until the dal turns light golden brown (about 30–45 seconds), stirring so it doesn't burn.

Toss in 8 torn curry leaves and 1 finely chopped green chili. Sauté for 10–15 seconds until fragrant.

Add 1 small thinly sliced onion. Sauté 1–2 minutes until translucent but still with a little bite. Add 1/4 cup grated carrot and 1/4 cup peas, sauté 1–2 minutes until vegetables are just warmed through. Season with a pinch of salt to help soften the onion slightly.

Add the fried idli pieces back into the skillet with the tempered mixture. Toss gently to coat the idlis with the seasoning and to heat through, about 1–2 minutes. Taste and adjust salt (add up to another 1/4 teaspoon if needed) and sprinkle optional 1/4 teaspoon red chili powder if you want additional heat.

Stir in 2 tablespoons chopped cilantro and remove from heat. Squeeze juice from lemon wedges over the idlis to brighten flavors (use to taste).

Serve

Transfer the fried idly to a serving plate. Serve immediately with ketchup or coconut/tamarind chutney on the side. Fried idli is best enjoyed hot and crispy.
