Heat Milk and Cream
In a large saucepan, combine the whole milk and heavy cream. Heat over medium heat, stirring gently until the mixture reaches about 190°F (88°C), or just before it starts to boil.
Add Lemon Juice and Salt
Once the milk and cream mixture is hot, remove it from the heat. Add the lemon juice and salt, stirring gently to combine. Let it sit for about 5-10 minutes to allow the curds to form.
Strain the Curds
Line a fine-mesh strainer with cheesecloth and place it over a large bowl. Carefully pour the curds and whey mixture into the strainer. Let it drain for about 15-20 minutes to achieve the desired consistency.
Optional: Flavoring
If desired, you can add vanilla extract and honey to the drained ricotta. Stir well to incorporate.
Store or Serve
Transfer the ricotta to an airtight container and refrigerate for up to a week. Serve fresh or use in your favorite recipes.
